過去經常被問到:「為何我卡士達醬配方添加的是【玉米粉】而不是【麵粉】?」又我發表過的甜塔餡料使用的增稠劑,也幾乎都採用玉米粉而不是麵粉,這兩者真的有質地上明顯差異嗎?在自己尚未找到明確食物科學原理前,直覺選用玉米粉的理由,大多來自使用經驗值,因為玉米粉不僅幫助了醬汁的濃稠,同時最終質地也更為細膩,不會因為操作上的疏忽,或是加入時機液體溫度不對 (如高溫時加入),產生了攪不散的粉狀結塊,為了預防這個結果就習慣選用玉米粉。

認識麵粉糊化與反向拌合法 | Flour Gelatinization and Reverse Mixing

糊化是一個澱粉與高溫溶液拌合 (混合) 後,因溫度對澱粉結構產生改變的特有現象。在甜點或麵包的烘焙過程裡,「糊化」是當麵糊進入烤箱後,等待麵糊溫度升高至接近攝氏80度時,自然產生的現象,不過我們卻也能夠將這樣特有「糊化現象」,提早到麵糊入爐之前,且這樣的例子還真不少,例如泡芙麵糊、部分戚風蛋糕麵糊,麵包製作時的燙麵法 (湯種法) 都是糊化的運用。我一開始特別用了【澱粉】這個字詞而非【麵粉】,是因為糊化現象能發生在所有澱粉食材,不過因小麥麵粉特有的【穀麥蛋白】及【榖膠蛋白】的緣故,因而麵粉糊化後的現象與其他常見如太白粉、地瓜粉、木薯粉或玉米粉等直鏈型澱粉有所不同。
